This would be dinner on Friday night, my next night off. I may just try the French onion and a big green salad with the tasty poppy seed dressing I made the other day.

Ok, this used to be Disneyland's Clam Chowder recipe, but I don't like the idea of clams, so I've morphed it into our family's corn chowdah recipe. If you want, you can take out the bacon and peas and add some clams, and you'll be back at the original recipe. Try it, you'll like it!

1/2 C butter
1 onion, chopped
6 T flour
4 chicken bouillon cubes
2 1/2 C hot water
1 1/2 C cubed potatoes, or more
1 16 oz. can whole kernel corn, undrained
3 C hot milk
1/2 bag frozen peas
1/2 pound bacon, cooked and crumbled

Dissolve bouillon cubes in water and set aside. Melt butter in large pot, and saute onions until tender. Add flour to butter and onions and stir until well blended. Pour in bouillon mixture, stirring with a whisk until well blended. Add remaining ingredients and simmer until potatoes are tender, stirring frequently so bottom does not scorch. Serve hot, and garnish with grated cheddar if desired.

I kept thinking about this as I was doing my grocery shopping "January is bread and soup month." We're doing bread and soup for dinner at least twice a week this month!
I'm a big believer in "instant home-made" soups. Things like minestrone-ish soup with a cup of pasta sauce, 1 can of chicken or beef stock (your choice), 1 can of canelli beans, 1 cup of cut green beans, 1 cup of your choice of small pasta. I may change the proportions and the ingredients depending on my mood, and what's in the pantry or refrigerator. Leftover roast or chicken? Add that in. No canelli beans? Any beans will do. Garbanzos are great, and so are black beans. Top with parmesan.

Yeah, I like pantry soups too. My mother-in-law makes the best and easiest chicken soup in the world. She cooks a whole chicken with onion, celery and carrots, takes out the bones and skin and adds a package of Top Ramen. So good! I'm thinkin' you could do it with a cooked chicken from the grocery store and then add whatever you want.
